Course Catalog Description

Special topics in Environmental Science, Policy, and Management. Topics may vary from semester to semester.

Class Description

This course will introduce students to the Native American food sovereignty movement in North America, addressing issues of cultural and physical health caused by disruptions to traditional food systems; the work of Native chefs to employ gastrodiplomacy through their cooking and help communities decolonize their diets; farmers and seed keepers’ work toward seed sovereignty; efforts to combat climate change, environmental contamination, and extractive industries to preserve food systems; fights to maintain treaty rights that ensure access to land and foods; and tribal communities’ work to develop food policies to support these issues.
